山蘇山蘇簡介

山蘇為蕨類的一種,又稱為鳥巢蕨,台灣地處熱帶與亞熱帶,氣候溫暖潮濕,相當適合蕨類的生長。山蘇是原生台灣600多種蕨類中價值最高者,更是野外求生的重要植物。山蘇品種多,除了南洋巢蕨(Asplenium australasicum (J.Sn.)Hook.)、山蘇花(Asplenium antiguum Makino) 和 台灣山蘇花(Asplenium nidus L.)三種主要原生種外,尚有羽葉山蘇(Asplenium nidus cv.“Fimbriatum”)、波浪山蘇(Asplenium nidus.) 、圓葉山蘇(Asplenium nidus cv.“Avis”)和魚尾山蘇(Asplenium nidus.)等。


1、選苗

因種苗種類多,食用山蘇的品種以原生種的南洋巢蕨和台灣山蘇花為主,為產量考量植株宜詳加選擇,食用山蘇務求『葉面寬大厚實、葉長較短、葉脈粗壯者』為佳。因此應特別重視選擇優良自然變異,繁殖優良植株,選擇可以遺傳的優良變異再加繁殖。

2、光照
檳榔園內投光率以約50%~60%為宜,檳榔植株太密時,予以疏減株數。光照不足降低光合作用和株體的水準;適當的透光,光能利用率高,可提高新芽之生長率。

3、遮網

黑色遮網較被農戶所採用者有810、610兩種,檳榔園內,以610者為佳,但得實際需要妥加選擇。否則太陰暗,透光不足,導致葉面狹窄陡長,新芽生長遲緩。

4、濕度
要有噴灑設施,早晚各噴灑一次,以增加濕度。因水是養分的溶劑,其具有運送養分及促進同化作用之功能。

5、溫度
以攝氏24度左右生長最佳,夏季氣溫在30度以上或冬季15度以下時,生長緩慢。

6、採收
山蘇食用的部位為幼嫩的新葉,有兩種採收方式,一種為植株留外圍1~2輪成熟的老葉以行光合作用,新葉長至15~20公分時從基部切取,夏季時約以10-15天,冬季約15-20天為宜,另一種為嫩芽長約40公分以上時採收。

7、施肥
於採收後必需施肥(有機肥),以7-10天施1次,施於葉面或葉中,以薄肥少量多施之方式行之。

8、整葉
於採收時,視實際需要順便整葉修剪,對密集生長之嫩芽,除必須預留部分之外,從葉脈基部預留2公分處剪斷,以達疏枝整葉、調節新芽發育之目的,如此有利於新芽之生長,更為粗壯,並能使葉脈成輻射狀開展生長之效果。

9、生產時節
A..生產旺季-
春分、秋分時節,月均溫在攝氏20-25於雨水足時,生長旺盛。

B.生產淡季-
夏至、冬至時節,月均溫高於攝氏30度或低於15度時,生長遲緩。

 

Asplenium nidus 山蘇花Bird's Nest Fern( Bird's Nest Fern)

Asplenium nidus (syn.: A. ficifolium Goldm., Thamnopteris nidus (L.) C. Presl., Neottopteris rigida Feé) is a species of fern in the family Aspleniaceae, native to tropical southeastern Asia, northern Queensland in Australia,Hawaii, Polynesia, Christmas Island, India, and eastern Africa. It is one of several closely related species known by the common name Bird's Nest Fern.

It forms large simple fronds visually similar to Banana leaves, with the fronds growing to 50-150 cm long and 10-20 cm broad. They are light green, often crinkled, with a black midrib, and exhibit circinate vernation. Spores develop insori on the underside of the fronds. These sori form long rows extending out from the midrib on the back of the outer part of the lamina (frond). The fronds roll back as they brown and create a massive leaf nest in the branches and trunks of trees.

The habit of this fern can be epiphytal or terrestrial, but it typically grows on organic matter. This fern often lives in trees like a bromeliad, where it collects water and humus in its leaf-rosette. It thrives in warm, humid areas in partial to full shade.

Plants named Asplenium nidus are commonly sold as house plants, though most of the specimens in the horticultural trade are not A. nidus, but different, but closely related species (R. J. Johns, in the 2001 Flora Malesiana Symposium).

It is also an aboriginal vegetable, in Taiwan. Furthermore, its sprout is edible and a very popular vegetable food in Taiwan.
